Brown-Butter Apple, Blue Cheese, Walnuts & Honey Toast


I love toast. All kinds. Avocado, buttered, cheesy. The "fancy toast" trend of 2014 was one of those food trends I could really get behind. What could be better than piling all of the foods you like on top of a piece of bread? 



I've been at my job for a year next week, and we haven't had a toaster the entire time. I've been complaining about it for about 11 months, 2 weeks and 6 days. Yesterday, I broke down and bought a toaster oven for the office. So get ready for some toasty lunches. 

This one is a variation of one I tried at SaltYard in Atlanta. I saw it on the menu and couldn't help but order it. I ate it and couldn't help but try and make it at home. So here you are, folks: whole grain toast, brown-butter apples, blue cheese, walnuts and honey. 

"But Alex, apples aren't in season!" 

Well they looked awesome at the farmer's market yesterday. So sorry. I'm sure you'll be seeing this same toast with strawberries, peaches or figs on my Instagram in the upcoming months. 


Let's Make Toast: 
(makes 4 slices)

  • 4 slices of bread (I'm trying to be healthy so we're doing whole-grain)
  • 1.5 Tbsp butter
  • 1 apple, diced or cut into strips
  • 2 handfuls of walnuts, crushed
  • 2 handfuls of blue cheese, crumbled
  • honey for drizzling

Preheat oven to broil. 

Preheat skillet on medium heat. Add butter and swirl in pan. When it begins to bubble (watch it closely!) add in diced apples. Add bread to oven. 

Sautee apples until soft and browned, about 4 minutes. Remove bread from the oven when as crisp as you like your typical toast. 

Top toast with apples, sprinkle with walnuts and cheese. Add a drizzle of honey to taste and place back in oven until cheese is melted.
